Oreo Cookies



A few weeks ago we made something similar to Oreo Cakesters out of a box mix. My litlist (sic) girl child and I were wondering what we could come up with tonight. We thought about trying to make the fudge pie again (we've failed TWICE at that now), we thought about making the Dr Pepper Brownies again (because they were absolutely the best), then we said OREOS! Oreos are about $4.50 a pack in Publix.

First I googled, and came up with some recipes that required anywhere from 1 hour to 2 days chilling time. We are patient people. We want our cookies RIGHT NOW. So we cobbled together a couple of recipes. Nothing new here, nothing that is "mine" it's all borrowed from people who are much better at it than I am.

Oreo Cookies

  • 1 1/4 C all-purpose flour
  • 1/2 C cocoa powder
  • 1 t baking soda
  • 1/4 t baking powder
  • 1/4 t salt
  • 1 C sugar
  • 1/2 C plus 2 T butter, room temperature
  • 1 large egg
  1. In a medium-sized bowl, mix the flour, cocoa, baking soda and powder, salt, and sugar. Then add in the butter and the egg and mix it until it begins to come together.
  2. It's going to be drier than you expect, almost the consistency of a biscuit dough.
  3. Take rounded teaspoons of batter and place on a baking sheet approximately 2 inches apart.Form the dough into oreo sized rounds. My OCD girl child tried to make each one the exact same size. It's not necessary, it just feeds the compulsive monster.

   4. Bake for 9 minutes at 375 F. 

The Icing

  • 1 stick unsalted butter, softened
  • 1/2 cup vegetable shortening
  • 3 cups confectioners' sugar, sifted
  • 1 teaspoon vanilla extract

Mix it altogether.  This is where you begin to say "I wish I hadn't been to cheap to buy that Kitchen Aid stand mixer". Spend the money!  You need it!IMAG0527

Even though it doesn't seem so in the pictures, the cookies have a satisfying crunch to them. They taste just like an oreo might taste without all the artificial flavors and preservatives in them.
