Oreo Cakesters with Sprinkles 

 

Supper came from the Chinese place today, I got up at 5am to get a website concept ready for a client today, got to work and started messing with the CSS files (something I'm NOT qualified to do) and broke it. So I had to spend all day fixing what I messed up. Anyway, that meant the homemade hoagie rolls I was planning to use to make meatball subs didn't happen.  So, Joy Luck it was. We did have a little fun today funfetti-cookies-betty-crockerthough. We made our own version of Oreo Cakesters. We being the littlest girl child and myself.

 

It all starts with a box.  Ok, yeah, maybe it shouldn't...but remember....broke a client's website. 

 

Vanilla is for the weak, so we used the chocolate version. Just mix 'em up like the box says and toss them in your oven.  Probably a good idea to turn it on first too....just saying.

 

My first intention was to use the icing from the cinnamon rolls the other day, but I did a little google searching and came up with an oreo cream clone.  Say that 3 times fast will ya?

Sometimes You Gotta Do What You Gotta Do!

 

It was a long day at work today. My boss actually expected me to work, can you imagine funny-pictures-kfc-chicken-stilts-flamingosthat? I'm putting together some concepts for a client, and time ran away from me so I didn't have any clue what's for supper.  All I knew is I had some chicken thighs left over from the Hoisin Chicken the other night.

 

 

Then if all of that were not enough it was pouring down rain when I got off work so there was no way I was going to the grocery store, so faced with some raw chicken thighs, and not a whole lot of choice in side items we got creative.

 

Our first taske was the entree.  I love fried chicken, but it's never, ever turned out well for me.  Never.  It always has a nice golden brown crust and bleeds like a stuck pig...err. chicken on the inside. Then I ran across this recipe on the Food Network website for fried chicken.  It called for the chicken to be boiled in milk prior to frying.  I'd never heard of anything like that, so I thought I'd give it a try.

Bacon--Ham--Ribs--YUMMY!

 

So I'm over near the butcher and decide to stock up on some things--ok, by things I really mean bacon. Yes, I went in for the bacon.  I'm marching by the counter and I see these fantastic country ribs and am compelled to stop.  Much like I was compelled to stop at the ground beef display, the italian saus....well you get the idea. I walked out with a couple of pounds of the ribs and some bacon and som....well you get the idea.

 

I get home, and the reality that my grill was a victim of salt air induced homicide and I have no idea what to do with these ribs.  Sure, I could have rubbed them down and tossed them in the oven but that just didn't sound too appetizing.  So I did what any self respecting geek would do, I googles.  I came up with something called Spiced Skillet Country Ribs.  It didn't sound like anything I had ever had, so it was time to experiment.
